Vegan BBQ Pulled Pork Jackfruit

I made this Minimalist Baker recipe for the first time over a year ago and since then I always keep cans of young jackfruit in my pantry – it’s just that good.

In fact, I brought it to a Super Bowl potluck last year and a couple who didn’t know it was vegan paid the ultimate compliment – they thought it was actual pulled pork.

I realize having young jackfruit – of all things – in your pantry isn’t the most typical item. It’s not like sugar or black pepper or the multiple varieties of salt I always have on hand (That’s normal, right?) . It’s not like having canned tomatoes or beans, but it is that weird quirky preparedness that makes me feel like I might be adulting…with style. Or, at the very least, I feel like in the zaniness of life I am sometimes actually prepared for random life decisions.

Tonight I decided on a whim to make vegan pulled pork, inspired by my friend Wenny (who runs the adorable and delectable La Vida Katzentung) who made actual pulled pork in a slow cooker all day with a side of collard greens.

The above deserves its own mic-drop, but luckily for me (and for you reading this) this jackfruit recipe is not an all day endeavor – it’ll only take 30-40 minutes. The recipe even runs you through making a great BBQ seasoning with things you probably should have in your pantry – brown sugar, chili powder, paprika, garlic powder – and you can use your favorite choice of BBQ. I prefer Annie’s Naturals Organic Original BBQ Sauce because its vegan and runs slightly sweet. If you want a slight smokey quality, you can’t go wrong with smoked paprika and smoked salt.

It’s the perfect thing to whip up on a whim after a long day at work or something quick to bring as a main dish to a dinner party. I happen to have homemade bread on-hand, but my personal favorite bread to eat with this is King’s Hawaiian Dinner Rolls. This filling and slaw is also great to have in tacos – which will probably be my dinner tomorrow.
